My name is Joe Erler. I'm a lifelong Hoosier and avid knife connoisseur. Speed has become the name of the game in the sharpening industry and, unfortunately, that's usually to the sacrifice of quality. I wanted to provide a premium-quality sharpening service for my community - one that didn't rely on motorized machinery or a "good enough" cutting edge. Thus, Indy Knife Company was born in the spring of 2021.
I'm a knife enthusiast, and I want your knife to perform as well as any. There's something deeply satisfying about using a sharp, well-maintained cutting tool. Whether around the kitchen, on the job, or in the field, that satisfaction instills trust that your knife will complete the task at hand without worry or hesitation. I want you to experience that, too.
While Indy Knife Company lives largely in the world of sharpening and maintenance, I love to educate people about knives and encourage proper knife handling and safety. I also work with Blue Ridge Knives, and have aspirations of becoming a fully-fledged, manufacturer-direct dealer for brands across the United States.
... and I don't pretend to have one.
If you have any questions about how I make your knives sharper than they've likely ever been, please don't hesistate to ask. In the meantime, this section should answer any general curiosity about it.
Indy Knife Company primarily utilizes fixed-angle sharpening with the Wicked Edge system. These sharpeners are made in United States of America and create uniform and consistent edges for your blades, resulting in better cutting performance.
I strive to maintain your blade's original edge angles, removing the least amount of metal necessary. The process uses monocrystalline diamond abrasives to take your knife's edges up to at least 1000 grit, which is comparable to, if not sharper than, a brand new chef's knife.
